I’ve tried the Beets, Black Radish, Sliced Carrots, Daikon with Ginger, Sauerkraut, Red Cabbage, and Grated Carrots. All have wonderful flavor. I believe these cultured veggies are some of the healthiest foods you can eat. They are completely raw and unprocessed, full of enzymes and healthful probiotic microbes.
Because the fermentation process converts most to the starches to lactic acid, these foods are very low in carbohydrates, with just two grams in a half-cup serving. Yet they are high in water-soluble fiber, which forms a bulky gel in the intestine that regulates the flow of waste materials through the digestive tract. Water-soluble fiber may also stabilize blood sugar by slowing down the absorption of carbohydrates into the blood. Plus, it can lower blood sugar levels. Researchers have found that increasing fiber intake results in a decrease in the body’s need for insulin. This is a very good thing – low insulin levels help promote good health and longevity.
